Features Arbequina: a small olive is very cold hardy rounded. It can be found in mid-November. It is a variety of the most popular for oil production, with a yield of 20 to 22%.

Mill, located in Quatretonda, municipality of Valencia. 
The olive farmers in the region of the Vall d'Albaida come to the mill where they extracted pure virgin olive oil. 
The harvest season is from November to February. 
The olives arrive at the mill at its optimum ripeness. Discharged to the mill where it is shredded. Then go to the centrifuge where the pasta, the water and the oil separates. When this process the oil passes hoppers and held for a month until the final impurities from pure virgin olive oil are separated. Passing the month the oil is extracted and packaged. 
The entire oil extraction process is natural. Tests are done to check that it meets the relevant health requirements.
